“Wine Tales -Xynisteri: The Soul of Cyprus in a Glass”

CHAPTER 1


Xynisteri is Cyprus’ flagship white grape variety, deeply rooted in the island’s winemaking heritage. Cultivated predominantly on the sun-drenched southwestern slopes of the Troodos Mountains, particularly in the wine villages of Paphos and Limassol, this indigenous variety has thrived for centuries in the island’s unique terroir. Its origins date back to ancient times, playing a vital role in traditional Cypriot wines, including the world-famous Commandaria, considered one of the oldest named wines still in production.

Resilient to the island’s dry climate and poor soils, Xynisteri yields fresh, aromatic wines with floral notes, citrusy brightness, and a distinct minerality. In recent years, a new generation of Cypriot winemakers has embraced Xynisteri, crafting both traditional and modern styles that reflect the grape’s elegance and the island’s character. Whether enjoyed as a crisp varietal white or blended with local grapes like Mavro, Xynisteri is truly the essence of Cyprus in every sip.



Today's chapter is dedicated to a new entry in the Xynisteri era: “EPILOGES” from Vasiliko Winery.

“Epiloges” is a trilogy of wines presented as a vertical tasting, made from 100% Xynisteri. This concept was born from the winery’s love for Xynisteri, with the goal of further showcasing the variety and exploring its full potential.

Three different vineyards from three distinct villages within the Protected Designation of Origin (PDO) Laona Akamas zone were carefully selected. Each vineyard plot possesses unique characteristics that make it truly special.

The fermentation process occurred spontaneously, without the addition of yeasts, aiming to create a wine with minimal intervention—one that highlights the variety’s traits in each region and reflects the terroir from which it originates.



  • Kathikas – Year of planting: 1967. Training system: traditional goblet. Soil: limestone with 15% clay. Altitude: 700 meters. Orientation: west.Aromas of citrus fruits with a full-bodied character.

  • Arodes – Year of planting: 1920. Training system: traditional goblet. Soil: clay-limestone. Altitude: 700 meters. Orientation: east.Aromas of white-fleshed fruits with a rich body and volume.

  • Ineia – Year of planting: 2010. Training system: traditional goblet. Soil: limestone-limestone. Altitude: 700 meters. Orientation: east.Herbal and white floral aromas. Beautiful length on the palate with a balanced acidity.
