Winemaking
Alátes is crafted exclusively from old-vine Xynisteri harvested at high altitude in the Afamis sub-region of the Limassol Wine Villages. Grapes are harvested at optimal ripeness, cooled immediately, and gently pressed. Fermentation and maturation take place in large, untoasted oak vats to preserve freshness while adding gentle texture to the wine.
Taste features – Aging
Bright lemon-yellow with green highlights, this wine offers expressive aromas of citrus peel, green apple, white stone fruits, fresh herbs and subtle mineral notes. On the palate it’s dry with vibrant acidity, well-balanced structure and a distinct saline, lingering finish. This elegant white has excellent balance and can age gracefully for 5–7 years.
Vineyard
Sourced from non-irrigated, old Xynisteri vines planted around 900 m elevation in the Afamis mountain area of Cyprus’s Limassol Krasochoria region, where cool nights and sunny days promote concentrated flavour and natural acidity.
Dominant soil type
Calcareous clay-loam soils that provide excellent drainage and contribute to the wine’s fresh minerality and citrus intensity.
Ideal food combination
Pairs beautifully with Periyiali’s grilled sea bream or lemon-herb marinated fish fillets, where the wine’s bright citrus notes and saline finish complement the fresh, clean flavours of the sea.
